So you probably won’t be interesting BUT there is this amazing, simple and always delicious recipe on my blog. I have to.
Blueberry muffins are for me the quintessential American sweet/cake. When I say United States of America, I say Blueberries so I say blueberry muffins!
A few years ago, in 2012, I went to New York with my mum. It was the second time for me, but the best! We spent two unforgettable and beautiful weeks.
It was very fun because I’m really close to my mum and we love the exact same things! We had visited many museums, walked in lots of streets everywhere we could! We went to Broadway to see Mary Poppins and we did a lot of shopping, etc. It was perfect.
Blueberry muffins reminds me of that moment. You know what? When we arrived, we realized the breakfast wasn’t included in the price of the room. It was like $25 per person each morning… So we had to find something else for the two weeks. We didn’t know where to go.
The first test was a delicious croissant in a chic restaurant, but it was like $30 for a coffee, a tea and two croissants. Very expensive compare to Paris and not very original for two Parisians. The second test was a disaster. We went to Wendy’s. My mom and I are not very lover of Fast food, but we were lost and at this time, I didn’t know Wendy’s. We ate a disgusting porridge soaking in water.
Finally, we found only one street away to the hotel a small American dinner. It was the perfect place. Not expensive, a rich menu and close to the hotel! They proposed delicious blueberry muffins. So everyday, it was a coffee for my mum, a delicious hot chocolate (#chocolatelover) for me and two blueberry muffins for only $9. Since that day, they remind me of New York with my mom.
For this recipe, I love to make it simple. It’s actually a simple cake. I always simple ingredients, but always quality! You know, you can make good food with simple but good quality ingredients.
Because I love to be healthy, I used half all purpose flour and half whole wheat flour, more rich in fibers. I also use almond milk for two reasons: it tastes better and it’s healthier.
To add a little extra thing, I made a crunchy topping with oat, sugar and oil, a little bit like granola.

Ingredients
- 1 cup all purpose flour
- 1 cup whole wheat flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 tsp vanilla extract
- 1/3 cup melted butter
- 3/4 cup cane sugar
- 3/4 cup unsweetened almond milk
- 2 eggs
- 1 cup fresh blueberries
- 1/2 cup old-fashioned oat
- 1 tbsp cane sugar
- 1 tbsp canola oil
Instructions
- Pre-heat your oven at 425°F.
- In a big mixing bowl, mix the two flours, baking powder and salt.
- Whisk the eggs with the vanilla extract, the melted butter and the almond milk.
- Add the wet mix to the dry mix. Mix well. Add the blueberries and mix again with a spatula.
- Butter or spray oil your muffins molds and pour the preparation to the 3/4.
- In a bowl, mix old-fashioned oat with sugar and oil. Scramble on the top of the muffins. Place in the oven for 30 minutes.
