Delicious green beans and cherry tomatoes salad with button mushrooms, the perfect dish during summer! The tomatoes taste good and the beans are fresh. Few ingredients and very healthy!
I’ve been in France for a week. I’m at my grandparents’ house with my mum. There is a beautiful garden with pretty vegetables. Unfortunately, we didn’t have as many vegetables as last year. This year is very warm in France, lots of heatwaves and our tomatoes don’t like it! But, few of them survive! We could find some cherry tomatoes, yellow tomatoes, and heirloom tomatoes.
In addition to that, my grandfather has green beans. He’s been growing it forever! And before him, it was his father who made them in his garden. Since I was a little girl, I’ve been eating it in the summer.
I’m lucky because my grandparents take care of me in the summer since I was born. My parents worked during July and I spent the entire month with them. I ate delicious tomatoes and green beans from the garden, lots of plums from the trees and I did a lot of riding. After that, I went with my parents to the south of France, nice summer!
This delicious salad is made with all these good produces from the garden. The only thing that doesn’t come from the garden are the mushrooms. But we have a lot of mushroom producers in this area (Center of France). You really can eat local and I love it!
To make this salad, you don’t need too much time and ingredients. It’s very easy and it’s what we like during summer, no? More time to be in the pool and the sea! You just have to cook the beans in boiling water for 10 minutes. During this time, chop the tomatoes and mushrooms, prepare the dressing and you’re done!Print
Delicious summer salad with fresh cherry tomatoes and green beans, few ingredients and ready in 15 minutes!
- 2 cups cherry tomatoes
- 2 cups button mushrooms
- 1 lb fresh green beans
- 1/4 cup chopped parsley
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
- salt and pepper
- Start by cutting the tips of the green beans. Cook them in boiling water for 10 minutes (they must be tender). Depending on the freshness, it may take more or less cooking time.
- During the cooking time, clean well the mushroom and cut in half the tomatoes and slice the mushroom, chop the parsley.
- When the green beans are ready, mix all the ingredient in a big salad bowl, pour the olive oil and balsamic on the top, salt and pepper. Mix well and serve!
