Summer salad with fresh ingredients: melon, avocado, couscous, chickpeas, burrata, and basil. Quick and easy to make, not a lot of things to cook, this salad is very convenient for your summer lunch or quick dinner.
I know, there are lots of salads in the blog these last posts. But you know, it’s summer! I only want to eat fresh food. It’s my last day in France… I go back to U.S. tomorrow night. I’m a little bit sad to leave my mum. I’m very close to her and it’s sometimes very hard to have an ocean between us. I call her a lot but it’s nice to do things with her.
Together we made some salads, especially with fresh tomatoes. Today I want to share a different salad. She hates melon, so I can think to her with this new recipe but I love it. You still have the time to eat melon for a few days.
To add a creamy thing, I love avocado, it’s rich and delicious. This time, it was one of these enormous avocados with a yellow-green flesh. The taste is really different. Of course, I love burrata! It was my summer fave. If you follow me on Instagram in my stories and the posts, you probably know that! I made tomatoes and burrata salad, Margherita pizza, etc.
By the way, don’t be stingy when you choose a burrata. Quality is essential. I don’t say you have to buy something very expensive but something good. Some weeks ago, I bought a cheap burrata at Walmart for a Margherita pizza and it was a disaster… The cheese was burned and so ugly, it was like chewing gum. I highly recommend buying good burrata at Wegmans or Trader Joe’s (Whole Food if you have one).
After this, choose any couscous you want! I like to buy whole wheat couscous, you have more fibers in it, it’s healthier. For the chickpeas, you can cook dry chickpeas in an Instant-Pot. I don’t have it so I buy can. I read an article the other day, it seems that glass jars are better than metal cans. If you can choose, take the glass jar.

Delicious salad with melon and couscous, few ingredients and quick to make.
Ingredients
- 1/4 melon
- 1/2 big avocado
- 1/3 cup dry couscous
- 1/3 cup cooked chickpeas
- 1 small burrata
- Fresh basil
- 2 tbsp olive oil
- Salt and pepper
Instructions
- Start by cooking the couscous with boiling water. Pour the dry couscous in a bowl and cover it with boiling water. Cover and let it cook for 10 minutes. Then, mix with a fork.
- Deseed the melon and peel it. Cut it in pieces avocado and melon. Chop 5 big leaves of basil. Drain and rinse the chickpeas.
- In a big plate, sprinkle cooked couscous, chickpeas. Divide the melon and avocado pieces. Make small pieces of burrata by hand and add them. Sprinkle chopped basil and finish with a drizzle of olive oil (about 2 tbsp) and salt and pepper. Serve.
