This salad is perfect as a side or for a healthy meal. Ready in 15 minutes, you will like it for a quick lunch or dinner.
- Cut the peaches in slices. Heat on high a non-stick grill frying pan*. When it’s hot, place the peaches pieces on a side, let it grill for 3 minutes, then return them with a kitchen clamp.
- Cut the avocado in slices. Mix in a bowl the honey, apple cider vinegar, and olive oil.
- To serve, you can mix everything in a big salad bowl or serve on each plate. Place the arugula, peaches and avocado slices. Sprinkle with feta cheese and almonds and drizzle with the honey dressing. Salt and pepper. Serve!
*If you have a garden and a barbecue, I advise you to do grill the peaches on it! More fun!
