This multigrain Oriental salad is simple to make and very healthy, it is vegan and rich in fibers and proteins. The sweetness of the dried raisin is nice and the mint is fresh.
I’m starting to feel the fall coming and I love that! I love the fact to be at home on the sofa with a blanket on the knees and a hot chocolate in the hands. Do you know this feeling? It’s so good!
I’m also super happy because I will have my first Halloween in the U.S! This party is for me a very American thing. It is very present in films and series, I always liked it. I remember the special Halloween episodes, always very cool. We don’t have this in France. There are a few parties at the Uni and some kids ask for candies but that’s all. When I went to Target the other day, I was amazed to see all these decorations! It’s crazy, I’ve never seen anything like it in France.
Fall also reminds me a lot of my grandparents. During the October holidays (we have this in France), I spent at least a week with them. I was walking through the dead leaves with my grandmother and she made me pumpkin soups. It was my favorite! Nothing is better than soup in front of the fireplace.
This salad is not a very fall recipe but we still find some cherry tomatoes, I think it will be the last recipe with them before next summer. We will have some hot weather this weekend in Pennsylvania so, I think a salad could be nice.

Oriental salad with quinoa and barley

Healthy vegan salad with few ingredients and delicious!
Ingredients
- 1/2 cup barley
- 1/2 cup red quinoa
- 1 small bunch of mint
- 1/2 red onion
- A dozen cherry tomatoes
- 1/4 cup dried raisins
- 1 lemon
- 4 tbsp olive oil
- salt and pepper
Instructions
- Cook the Barley and the quinoa in boiling water in a separate saucepan. Check the package to see how many times (it depends on the brands). When it’s cooked, drain and rinse.
- Rinse the cherry tomatoes and cut them in half. Chop the mint and cut the onion in slices. Press the lemon to have the juice and mix it with olive oil in a small bowl.
- In a big salad bowl, add the Barley, quinoa, chopped mint, red onion, tomatoes, dried raisins, pour the lemon dressing, salt and pepper, and mix. Serve!
