This end of summer dish is perfect for a vegetarian dinner. Easy to make, very healthy, few ingredients and ready in less than an hour. You will love it! Stuffed bell peppers are always a success!
It’s still warm in Pennsylvania. I really feel this end of summer. I don’t know how is the weather for September but for the moment, I like it! Bell peppers are still affordable and seasonal. These stuffed bell peppers are hot (but not too much) and so healthy!
I made this recipe for the vegetarian week of my husband. Yeah! I did it! My husband eats a ton of meat. Sometimes it’s for breakfast + lunch + dinner… I’m not against the fact he eats meat but not as much as it! So, I challenged him to do a vegetarian week. Actually, it was not very a whole week… but four and a half days. He started on Monday of last week and finished on Friday at lunch. It was his birthday on Friday and he loves burgers so I made homemade burgers and of course there was red meat!
I think this challenge was interesting and a success. I just want him to reduce his consumption of meat. He understands now how it is important for his health and the planet. I’m vegetarian (mostly vegan) but I don’t want everyone to become vegan. I believe in the right way to eat. Sometimes some meat but 80% of the time vegetarian. This is why there are some meat recipes on the blog. You can enjoy something you love but don’t forget the animals, the earth and your health. Personally, I think that kind of mentality will change the world and in the end, people will be 90% vegan.
These stuffed red peppers are nourishing and very delicious. You don’t have a lot of things to do for this recipe and it’s not very long to do. You just have to cook the orzo, mix with the other ingredients, stuff the bell peppers and place in the oven for 40 minutes. The last part of the recipe is longer. But, you have nothing to do during this time. Watch TV, Netflix, take a shower, anything you want! Then, set the table and if you have kids, call everyone to the table! So simple, no?
I personally love to make some salad with it. You can make your favorite, at this time, I love arugula, it’s very tasty. You can add some nuts to it, it’s very delicious. Ingredients
- 3 red bell peppers
- 1/2 cup raw orzo
- 1/3 cup feta cheese
- 1 small bunch of parsley
- 2 tbsp olive oil
- Salt and pepper
Instructions
- Start by cooking the orzo in boiling water for 10 to 15 minutes. Pre-heat the oven at 400°F.
- Cut in half two of the bell peppers remove the seeds, cut in cubes the third one. Chop parsley.
- In a big bowl, mix orzo, feta, parsley and, bell peppers cubes. Add olive oil, salt and pepper. Place this preparation in the half of bell peppers.
- Place the stuffed bell peppers in a baking sheet and place in the oven for 40 minutes. Enjoy with a delicious salad!
