It’s March! I love this month because my birthday is on March 22nd and we are closer to spring, my favorite season. This is obviously my favorite season with all the flowers everywhere, Pennsylvania is sublime. I can see a lot of gardening in the city where I live, it’s wonderful. However, it is still a bit chilly. If you follow me on Instagram, you must have seen in my story that we had a snowstorm this weekend with very, very cold temperatures. This is why spring vegetables are not yet available, they are not normally even planted yet. So you still have to eat the winter vegetables! For example carrots and cabbages.
I love grated carrots! In France, I found them found everywhere. In supermarkets, in fine groceries or even expensive caterers. It’s very simple, but we like it in France. Unlike the United States, we can find them ready with a sauce. It’s less common here. I can easily find them already grated but not always accompanied by the sauce. Afterwards, it is not something I need because it is very simple (and even better) to make it homemade.
But for today, I wasn’t going to offer you a simple recipe of grated carrots. I made a salad with red cabbage and my favorite rice: black rice. I love this rice because it is one of the tastiest rice I have tasted, but most of all, it is the most antioxidant rice that exists. To add more and more benefit to this salad, I added on top some sprouted seeds that I love. You saw it last week in my roasted carrot salad. I know, lots of carrots on this blog, but I like to eat seasonal product.
You will notice that I want to make Mondays a healthy and vegetarian cooking day. You know why? Because my weekends are often made of less healthy cooking and heavier. In addition, I completely agree with the meatless Monday. We need to reduce our consumption of meat.

Red cabbage and carrot with black rice salad

Description
Easy and healthy salad with just a few ingredients.
Ingredients
- 2 big carrots
- 1/4 red cabbage
- 1/2 cup black rice, uncooked
- 1/4 cup sprouted seeds
- 3 tbsp olive oil
- 1 tsp mustard
- 1 tbsp apple cider vinegar
- Salt and pepper
Instructions
- Cook the black rice in boiling water, check the package to know how many time.
- Peel and grate the carrots. Finely cut the red cabbage.
- Make the dressing, whisk the mustard, olive oil and apple cider vinegar.
- When the rice is cooked, Place it in a big bowl, add carrots and red cabbage and the dressing, mix well. Add some sprouted seeds on the top.
