
I know, this recipes looks weird! So much stuff! But don’t worry, it’s really delicious. Actually, to be honest, my fiancé doesn’t like roasted beetroot but just give it a shot.
For this mix I would like to have sweet with beetroot, spicy with salsa and crispy with chicken. I hope you will like it. Let me know.
I really love beetroot, my grand-father has some in his garden. Some time, we eat them cooked, grated and finally, roasted! I like this last way to prepare it. It’s actually very simple to make. Actually, I was a little disappointed at first because I couldn’t find balsamic vinegar, a lot of oil and olive oil but no balsamic vinegar! It’s like a tradition in France, we add balsamic in every salad. Finally, I managed to fin it at Trader Joe’s! Just one choice but it’s fine, this one is good.
To add some creamy and spicy, the avocado salsa was perfect. I can eat avocado every day! It’s delicious and healthy. You can make so many things with it!! Do no hesitate to make more salsa, you can add it in salad or use it as a sauce for tacos for example (that gives me ideas)…

Crispy chicken with avocado salsa and roasted beetroot

Ingredients
Roasted beetroot
- 2 raw beetroot
- 1 tbsp balsamic vinegar
- 1 tbsp olive oil
- salt and pepper
Crispy chicken
- 1 chicken breast (or two if big eaters)
- 1/2 cup breadcrumb
- 1 tbsp paprika
- 1 egg
- salt and pepper
Avocado salsa
- 1 ripe avocado
- 1 handful cilantro
- 1/2 jalapeño (de-seeded)
- 1/2 lime (juice)
- 1/4 onion
- 1 tsp cumin powder
- 1/3 cup water
- salt and pepper
Instructions
Roasted beetroot
- Start with beetroot! Peel them and cut them in slices. In a mixing bowl, add the pieces, the balsamic vinegar, the olive oil and salt and pepper. Distribute the beetroot pieces on a baking sheet covered by a parchment paper and place in the oven for 20 minutes at 400°F.
Crispy chicken
- Mix in a plate the breadcrumb, paprika and salt and pepper. Beat the egg in a bowl. Start to soak the chicken beast in the egg and after in the breadcrumb mix. Place in a baking sheet and place in the oven for 25 at 400°F.
Avocado salsa
- Place all the ingredient in food processor and mix well. That’s all, it’s ready!
- To assemble everything, I add some mixed laitue with the roasted beetroot. On it I put the chicken (cut into slices) and I drizzled some avocado salsa on the top.
