Today I want to share with you a delicious and healthy recipe for the week. Actually, you can prepare some of the ingredients and eat it during the week when you don’t have time to cook, it’s very convenient.Â
Sweet potatoes are so good! I love this sweet taste when they are baked in the oven. I think is healthier than regular potatoes, I read something about it. With al the others ingredients, you will be in shape!
My husband and I really want to be more healthy and active. I think vegan food is good for the health. My husband want to eat meat but I think I can convince him to reduce a little bit. Will see! But today, I need healthy food! I don’t know why but I’m not feeling very well. Maybe too much bad food during this weekend. But I will try to be better this week, more gym and more healthy food!

Stuffed sweet potatoes with avocado

Ingredients
- 2 sweet potatoes
- 1 avocado
- 1 red bell pepper
- 4 handful kale
- 1 tsp chili flakes
- 1/2 tsp cumin powder
- 1 tbsp lemon juice
- 2 tbsp olive oil
- salt and pepper
Instructions
- Start by cooking the sweet potatoes. Stab a knife or fork everywhere on the potatoes. And place in the oven for 45 minutes at 400°F.
- During this moment, sauté some kale and bell pepper with olive oil in a pan for 10 minutes. Salt and pepper.
- Mashed the avocado with a fork, add chili flakes, cumin powder, lemon juice and some salt and pepper.
- When the sweet potatoes are ready, place them in a plate and open them in the middle. Place some avocado mashed and the mix of kale and bell pepper all around.
