Cranberries balsamic roasted chicken

  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • 2 tbsp maple syrup + 1 tbsp
  • 1 cup fresh cranberries
  • 2 tbsp water
  • salt and pepper
  • 4 chicken drumstick or chicken thighs
  • Fresh thyme


  1. In a food processor or blender, mix the balsamic vinegar, olive oil, 2 tbsp maple syrup, 1/2 cup fresh cranberries, and the water, add some salt and pepper. Pour the mixture in a big bowl and place the chicken pieces. Let marinated at least 1 hour.
  2. Pre-heat the oven at 375°F.
  3. In an oven dish, place the chicken pieces with the cranberries mixture add 1/2 cup fresh cranberries around and 2 tbsp fresh thyme. Brush with 1 tbsp maple syrup the top of the chicken, salt and pepper.
  4. Place in the oven for 45 minutes. When it’s done, I like to add some fresh thyme on the top.
