This chicken stew is very simple to make with just a few ingredients. It’s Frenchy recipe inspired by my mother’s cuisine. You will like it for dinner with some rice. The best is leftovers! Freeze what you have left and you’ll have a delicious meal for later!
My first inspiration for my recipes is my family, in particular my mom with whom I learned cooking and to love good food. She often made me creamy chicken with crème fraiche when I was young, it was a simple dish to make for a busy mom but always delicious. We liked to accompany it with rice.
In some stews like blanquette, we like to add mushrooms in France. At this time of the year, when winter is still present, but we are getting closer to spring, mushroom is a good ingredient. It grows all year round. It is a delicious ingredient with crème fraiche, it goes very well together. But I also wanted to add some herbs (very important in the French cuisine). In my mom’s creamy chicken we added tarragon, but with mushrooms I choose thyme. I think it’s a better combination.
About the cream of this recipe, of course, in France we can find crème fraiche everywhere and in different versions (light, a little more liquid or rich). In the US, it’s a little bit more complicated. If you are in a big American town like New York or Washington DC, I’m sure you will be able to find some in particular stores, but here, in the middle of the Pennsylvania my only option is a crème fraiche at Wegmans (very expensive) or at Trader Joe’s (also a bit expensive). I also want to adapt my recipes to what I find here. So, my choice turned to sour cream. It’s actually very close to the French crème fraiche and with all the other ingredients, the result is great.
To accompany this stew, I choose rice, but if you want vegetable, you can also make more mushroom and maybe add some carrots. I’m sure it will be great! Creamy chicken with mushroom and thyme

Description
Simple creamy chicken for a family dinner or a weekend lunch! Few ingredients and super easy to make.
Ingredients
- 6–8 chicken thighs, boneless, skinless
- 1 lb baby bella
- 1 onion
- 2 garlic cloves
- 2 tbsp olive oil
- 1 cup sour cream
- 1 little bunch of thyme
- Salt and pepper
Instructions
- Prepare all the ingredients. Coarsely cut the onion, chop the garlic and slice the mushrooms.
- Heat a cast iron pot, pour in the oil and add the chicken pieces. Sauté them for about 5 minutes on each side to brown. Then, remove chicken pieces from the heat but keep the cast iron.
- Add the onion pieces and garlic. Sauté 3 minutes until the onions become translucent. Then, add mushrooms, thyme, sour cream, salt and pepper. Mix.
- Add the chicken, mix a little bit with the cream and mushroom. Reduce the heat and cover. Let it cook for 30 minutes.
Notes
You can serve this creamy chicken with rice, pasta or other vegetables.
