This simple soup with peas and mint is a must for the begging of spring. A usual, just a few ingredients, simple recipe and a delight!
I love peas! Strangely, until then I didn’t care much. I believe it was under the influence of my grandparents. They told me to eat only peas from their garden and only when it’s the season. Unfortunately, they are far too far away for me to appreciate their harvest. They also would rapped on the knuckles because it’s not the season at all. Actually, I was inspired by Saint Patrick for this peas and mint soup. The mix of peas and mint is a classic in England and Ireland. Besides, we want this pretty green color for this party.
I’ve really liked soups since the beginning of winter. I make one of them almost every dinner. It’s very simple, you make a large pot of soup with the vegetables you have in your fridge. Since I’m the only one who eats it at home, I put the leftovers in glass jars that I put in the fridge and eat over several days. I usually bring a small slice of bread with my soup, sometimes with some hummus. It’s my winning dinner combo. I’m one of those people who doesn’t like to eat too much at night or I don’t sleep very well.
I find that adding some peas to a soup brings a little sweet taste and creamy that I love. I also added some zucchini to the recipe to make it lighter and ricotta for consistency. You can also use sour cream if you prefer. The good thing about soups is that they can be processed to the sandstones of our cravings and especially of what we have available.

Description
Simple spring soup with just a few ingredients.
Ingredients
- 2 cups peas (I used frozen peas)
- 1 cup zucchini slices
- 1 chopped onion
- 2 tbsp ricotta cheese
- 1 small bunch fresh mint
- Salt and pepper
- Olive oil and mint to add on top
Instructions
- Put the peas, zucchini pieces, onion and mint in a pot. Cover with water and bring it to boil. Then, cover and let it cook for 20 minutes.
- Salt and pepper, add the ricotta and blend with a hand blender or in a traditional blender.
- Serve in a bowl and drizzle on top some olive oil and add some mint leaves.
