This spring spelt salad is a way to celebrate spring. The ingredients are fresh with crunchy vegetables and spelt. It’s vegan, super simple to make and perfect for a lunchbox. It can accompany your spring barbecue.

Here we are. This is the first day of spring. Obviously, we would all have liked this day to be a little different… My country is closed in the same way as Italy. I have never felt so far away from my family. Fortunately, they are all in our family home in the country and that reassures me! Moreover, I envy them very much. Because they can enjoy the garden and that first day of spring while I’m locked in my apartment in Pennsylvania. I’m in a small town so the countryside is not far away but I can’t get out on a chair, feet in the grass right in front of my house…


We must remain positive in this difficult time. It is time to do what you have never found the time to do! For me, it will be the drawing. I spent my days drawing when I was younger and with time, work and active life, I didn’t touch a pencil or a brush. Time to get back to it!
There is also cooking. I already spend my days doing it usually because my work depends on it. In the last few days, I’ve been a little less. The anxiety situation made me lose the pleasure to cook. I stayed in front of the French and American news channels to find out what’s happens in the world right now. I suggest you finally start making recipes that you’re not used to, this is the time.
However, what is really not funny are food shortages. I know the stores will normally be restocked, but I had to go to four stores yesterday to buy an egg box. Also, I had a lot of trouble finding flour and couldn’t find baker’s yeast, I was very disappointed. I hope I find some in a few days when I go shopping again.

So I am thinking of all of you! I hope that everything is going well for you, that you are not sick. Stay at home and learn to relax. For my part, it makes me see life very differently. I am aware of our huge dependence on supermarkets and multinationals. It’s a little lame. It may also be necessary to learn to live slowly and well, to be happy with little things like just a good book and a recipe to be made to be busy in a day.

Spring spelt salad with broccoli and radish

Ingredients
- 2 cups broccoli florets
- 1 cup peas
- 10 radishes
- 1 cup uncooked spelt
- 3 tbsp chopped chive
- 3 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper
Instructions
- Cut in small pieces the broccoli and cook it. Cook the peas and cook the spelt (check the package to know how many time) then, rinse with cold water.
- Cut in slices the radishes and chop the chive.
- Place all the ingredients in a big salad bowl and mix with the olive oil, lemon juice and salt and pepper.
