This apricot and almond tart is the best dessert for Sunday. It’s the perfect balance between fruits, almonds and sugar. You don’t need an entire day to prepare it, it’s simple and doesn’t require a lot of ingredients.
I love apricot and almond tart so much! For me, it’s the south of France for dessert. I’m sometimes a little disappointed that I can’t easily find apricots in the US. They are either expensive or non-existent. It was at Trader Joe’s that I bought them, they had a reasonable price. However, to be honest, they didn’t have that juicy taste that apricots from the South of France have. It was very nice when I went several times to Apt in Provence. It’s a small town with one of the most beautiful French markets. I’m always in awe of the fruits and vegetables that I find there. And I’m not even telling you about the olives! They are amazing!
Now back to this pretty pie. I’ve always liked “frangipane” tart with almonds. It works very well with a lot of fruits but I have a real crush for apricots. I think this apricot and almond tart is the best match. What also pleases me a lot with this recipe is its simplicity. It’s the perfect Sunday dessert (or every other day if you want). You can do it quietly in the morning and it’s ready. This time I didn’t make the pie crust by myself, however if you want to make it, don’t hesitate!
What do you need for this apricot and almond tart?
Apricots: Choose them very ripe and juicy. I wash them well and cut the less pretty parts.
Almond meal: you can make your own by mixing powdered almonds
Pie crust: I like the one I’m buying, it’s a real time saver but don’t hesitate to make your own recipe if you have one.
Sugar: I used granulated white sugar
Eggs: I prefer fresh and organic eggs
Butter: I used soft unsalted butter. Remember to take it out of the fridge at least 30 minutes before so that it has the right texture.
Sliced almonds: It’s always pretty and crunchy!

Description
This apricot and almond tart is the best dessert for summer. It’s the perfect balance between fruits, almonds and sugar.
Ingredients
- 1 pie crust
- 1/2 cup unsalted butter, softened
- 1/2 cup almond meal
- 1/2 cup granulated sugar
- 2 large eggs
- 1 lbs fresh apricots
- 2 tbsp sliced almonds
Instructions
- Preheat the oven to 350ºF. Place the pie crust in a mold if it doesn’t already have it.
- Wash and cut the apricots into quarters.
- In a large bowl, beat the butter and the sugar with a whisk. Then add the eggs and mix well. Finally, add the almond meal and mix until you have a homogeneous mixture. Pour in the pie crust.
- Add the apricot pieces on top. Sprinkle with the sliced almonds.
- Place in avent for 40 minutes or until it’s lightly brown. Let cool before cutting in slices.
